Carrot Cake

SIFT TOGETHER 2 cups flour
                               2 teaspooons baking powder
                               1 1/2 teaspoons baking soda
                               1 tsp cinnamon
            set aside
            COMBINE 2 C white sugar
                               1 1/2 C vegetable oil
                               4 eggs
             ADD dry ingredients, mix well
                 STIR IN 2 C finely grated carrots
                               1 small can crushed pineapple (drained)
                               2 Tablespoons of the juice from the pineapple
 BEAT 3 min
                     Stir in 3/4 C cut broken walnuts, if desired

BAKE in greased and floured tube pan for 1 hour at 350
 
 
                                 FROSTING
 
Beat together till creamy 8 oz. Cream cheese
1/2 C butter (2 sticks)
2 C powdered sugar (10X)
After thats nice and creamy add 1 teaspoon vanilla
